Birthday Fun

I just celebrated my 34th birthday Saturday and Sunday. Many family members and dear friends made the weekend very special. I can't figure out how to download the rousing "Happy Birthday" song video, so I won't be posting that. I got to go on a date with Jared Saturday evening thanks to our friends the Angells taking ALL of the kids. Then, Sunday we had dinner with them at our house. Jared made my favorite food, spaghetti and breadsticks, and the Angells made delicious lettuce wraps. Instead of birthday cake, at my request, Jared made a super yummy pie: Freezer Drizzle Caramel Pie. Here's the recipe for your enjoyment:



2 (9 inch) prepared graham cracker crusts (we used chocolate cookie crusts)
6 tablespoons butter
1 (7 ounce) package shredded coconut
1 cup chopped pecans
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container frozen whipped topping, thawed
1 (12 ounce) jar caramel ice cream topping
Directions

Place butter in a medium skillet and melt over medium heat. Add coconut and pecans, stirring to coat. Saute until coconut and pecans are lightly toasted, about 5 minutes. Set aside.
In a large mixing bowl, whip together condensed milk and cream cheese until fluffy. Fold in whipped topping. Spoon 1/4 of cream cheese mixture into each graham cracker crust. Drizzle each with 1/4 of caramel topping. Repeat layers with remaining cream cheese mixture and caramel. Top each pie with coconut and pecan mixture. Freeze overnight.

Now, I really hate drawing attention to myself. I wouldn't have posted anything at all about my birthday except my kids were super cute about the weekend. First, Hyrum came to me when he woke up and with no prompting at all asked me, "Is it your birthday, Mommy?" When I said it was he exclaimed, "Happy Birthday Mommy!" Later when he gave me his gift (a wii fit board cover that came in a cylindrical package) he said, "Happy Birthday Mommy! I gave you toilet paper!!"

I had told Kaitlyn that I would love it if she drew me a picture for my birthday. Here's what I got (notice the wink that is so characteristic of Kaitlyn):

Leah also chose a birthday gift for me. She was very concerned that I wouldn't like it. I tried to reassure her that I would love whatever it was. She then said "I'm just not sure that 'genuine' and '$5' go together"!
Well, she did a good job picking my present!

So glad you had such a good birthday cause you definitely deserve it. Love the kids gifts! They are so funny! Hope you got our message and card.
